Red wine sauces for duck
Suggestions for “fancy” meal?

I consider myself an OK cook, but most of the time I just make quick dinners. However, my most special recipe is duck with cherry sauce. It is a recipe from a French country cooking book and it is really great. It is perfect with red wine. Anyways, this is my one and only “fancy” meal, and I have been making it for a few years, so most of my friends have had it already. Can you suggest a new dish? I would like something that seems special and out of the ordinary, but that will also appeal to a lot of people. I also need something that is not spicy and does not have tomato sauce, because my husband gets terrible heartburn. Thanks in advance for your suggestions!

1. Chicken Marsala
2. Linguini with a white cream sauce and seafood.
3. Sheppard’s Pie
4. Roasted lamb shank (aka osso bucco)

There are many ways to make the above mentioned dishes. You should google and find your favorite None of these dishes contain tomatoes in it.

My favorite way to make osso bucco is to rub it with rock or kosher salt, stick it with cloves and roast it in the oven.

I also cheat sometimes with cheppards pie and use a brown gravy packet with the beef instead of making my own gravy.

For the white sauce, I start with a roux (equal part butter to white flour and mix in cream or 2% or more fat milk on low heat constatnly stirring so you don’t scorch the milk) and add what ever seafood you want. I like sautteed scallops or clams (cooked live or from a can.)

Chicken marsala . . . I saw Martha Stewart make it once. It taste different every time I make it because I change the brand and type of white wine for the sauce. I also switch up the mushrooms from button to crimini or chantrells. You can make it more fancy by using truffes. It’s always good and it’s a hit with all my friends.
