While you can use “cooking wine”, the general rule for using wine when cooking is if you wouldn’t drink it, don’t cook with it. If you want to use up the cooking wine you have I would say you can go ahead and use it to try (but it won’t taste good)… but for a good sauce you should always use wine that is at least drinking quality. It doesn’t have to be good wine necessarily, but an okay $3 bottle from the wine section would be a lot better.
