Quinoa is a great addition to your diet if you want something healthy, nutritious and tasty undeniable. One of my favorite recipes is red quinoa and red quinoa salad broccoli. For this recipe will need:
2 cups red quinoa
1 small head of broccoli cut into very small Bouquets
2-3 green onions (chopped)
6 oz extra firm tofu (Cubed)
1 clove garlic (minced)
2 tablespoons cooking oil
1 / 4 cup almonds or chopped walnuts
Salt and pepper to taste
Heat oil in a medium skillet and saute garlic. Add tofu and sprinkle with salt and pepper. Sauté for 3 minutes or until golden tofu. Add the chopped broccoli and cook until tender preserve. Turn off the heat and in another bowl, mix the Red quinoa, tofu and broccoli and mix together. Add almonds or walnuts and serve.
Another recipe I like is very easy to make quinoa salad. The ingredients are:
1 cup red quinoa
2 cups water
6 radishes (chopped)
A red onion (Dice)
1 large tomato (chopped)
¾ cup crumbled goat cheese
2 tablespoons capers (coarsely chopped)
2 tablespoons fresh oregano (chopped)
For the dressing, you must:
1 tablespoon Dijon mustard
4 c. tablespoons red wine vinegar
1 / 3 cup olive oil
Salt and pepper
Bring water to boil and put the quinoa and cook for 15 minutes or until water is completely absorbed. Allow to cool and mix quinoa salad ingredients except goat cheese. For the dressing, mustard and vinegar gown until smooth, pour olive oil and stir constantly until the mixture begins to melt. Add salt and pepper to taste. Pour dressing over salad and toss well. Sprinkle with cheese.
