If I’m making a shrimp sauce for pasta and the recipe calls for white wine, can I substitute champagne for the wine instead?
You can, LadyBug. If the recipe calls for a dry white wine, I’d make sure it’s a a dry champagne you are using, like a Brut. If it’s a sweeter blend or sparkling wine – say an Asti Spumanti, it may end up being sweeter than you would like it.
Chicken champagne is made with bubbly too, with a dry or neutral champagne. But if you wanted it sweeter, you could certainly use an Asti. The same goes for your shrimp.
