What’s a good recipe for white wine sauce.?

It’s to go with Chicken Florentine. If you don’t know what that is, it is chicken breast stuffed with spinach, parmesan, cottage cheese etc. Somebody suggested Bechamel Sauce, but that is more for pasta, not what I’m making.

Bechamel is the basic sauce for many white sauces.

Melt 5 tablespoons butter in warming saute’ pan. Add enough flour to thicken about 4 to 5 tablespoons and cook for about 5 min. This enables the butter to come through and diminishes the flour taste. I use 1/2 & 1/2 instead of milk about 3 1/2 cups maybe four. Cook until thickened add a little salt and fresh ground pepper. If you add Parmesan you will get an Alfredo style sauce. Add a little sherry or white wine for that particular flavor. If you add more liquid be sure to maintain the consistency of the sauce. You can do this by making a butter & flour roux and adding a little at a time. Chopped basil or parsley brings out another flavor. Fresh nutmeg over the top is also good and gets you nearer a Bechamel. Add some sliced mushrooms for a mushroom style sauce. Possibilities are many. I would probably use either the parsley or the mushrooms to compliment the Florentine aspect of the meal.
